Dr. Hummel posted the following additional comments:

"The original Star Wars trilogy (now known as Episodes IV-VI) had many scenes of smoking, exclusively in the form of hookahs or water pipes.

In this scene from the original 1977 film, the smoke-filled cantina includes two characters using hookahs.  See if you can spot them:

You can actually hear this alien as he sucks air through a waterpipe:

The other alien actually has a name:  Dannik Jerriko. In the original Star Wars script, Dannik was simply an extra known as “pipe smoking alien” whose table is disturbed when Pando Baba gets his arm severed by Obi-Wan:

Dannik Jerriko was later featured in his own short story titled Soup’s On: The Pipe Smoker’s Tale from the book Tales from the Mos Eisley Cantina published in 1995.  He even has his own action figure, where he carried around his hookah pipe on his belt!
